But why?
Why is it that every character in the lord of the rings movies has blue eyes? I know for a fact that some of the actors dont have blue eyes naturally, so what is the purpose? Does peter jackson just have some sort of personal vandetta against brown eyed (or green eyed or grey eyed or whatever eyed) people, or does it actually serve some symbolic significance?

It's clearly because we're better.

I second Amy and add it is because we are Aryan and thus the master race.
Here is the nerd answer:
First off, all elves in Middle Earth have blue eyes. The shade of blue denotes their race. The Lothlorien elves have light blue eyes and the Rivendell elves have dark blue eyes. Also, elves' eyes change colour according to their mood, so sometimes in the movie their eyes may appear brown. Examine the scene and it will probably be a tense scene or something.
Also, I do believe that if you have handled the ring your eyes go blue. I believe I remember that from the books.
Funny Answer:
Because you touch yourself at night.
